VEGAN CREAMY PUMPKIN SOUPN (GLUTEN FREE)

For a creamy and vegan pumpkin soup recipe sprinkled with almonds and fresh rosemary, try the recipe below.

Serves: 3

Prep time – 5 minutes

Cook time – 25 minutes

Total time – 30 minutes

Ingredients

  • 1 tablespoon olive oil
  • ½ onion, diced
  • ½ pumpkin, peeled and cubed
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, diced
  • 4-5 cups vegetable broth
  • ½-1 cup coconut milk

Instructions

  1. Heat oil in pot over medium heat. Add onion and cook for a few minutes until translucent. Add pumpkin and garlic and continue to cook for a few more minutes.
  2. Add rosemary and vegetable broth. Bring to a boil, reduce heat to low and simmer until pumpkin is soft and cooked through. Add salt to taste.
  3. Puree soup in a blender (in batches) and return to the pot.
  4. Add coconut milk and simmer for another minute or two.

Give this recipe a try. It is simply delicious and healthy too.

Tips for the Single Parent

 

Being a single parent is not easy; it has its own set of challenges.

Couples get together with the very best of intentions, full of hopes and dreams of white picket fences, 2.5 kids.

No one enters into a committed relationship with the intention of uncoupling. Nonetheless, it’s a distressingly common occurrence.

Suddenly, you find yourself a single parent. Even if you have always been an active, involved parent, this is a completely different experience.

In the best of situations, with a support team of grandparents, aunts, uncles, siblings, friends, etc. you may have bouts of frustration and fatigue.

During these times you will have to push through and step-up. There is no substitution for a parent when dealing with a crying toddler, grumpy daughter or a son who failed to make the last out. These are hurdles you and your children will have to scale together.

Some of the most common ways a single parent can cope with and reduce stress are:

  • Finding a balance – Remember that parenting is about the moment. Take a deep breath and let go of your expectations.
  • Show your love –Praise your child. Give him or her unconditional love and support.
  • Create a routine – Structure, such as regularly scheduled meals and bedtimes help your child know what to expect.
  • Find quality child care – If you need regular child care, look for a qualified caregiver who can provide a safe environment. Do not rely on an older child as your only babysitter and be careful about asking a new friend or partner to watch your child.
  • Set limits – Explain house rules and expectations to your child, such as speaking respectfully and enforce them.
  • Don’t give in to guilt – Don’t blame yourself or spoil your child to try to make up for being a single parent.
  • Make time for yourself – Include physical activity in your daily routine, eat a healthy diet and get plenty of sleep. Make time to enjoy alone time or activities with close friends.
  • Lean on others – It’s okay to join a support group for single parents or seek social services. Call on trusted loved ones, friends and neighbors for help.
  • Stay positive – Be honest with your child if you’re having a difficult time, but remind him or her that things will get better. Try to keep your sense of humor when dealing with everyday challenges.

Mistakes may be made, but with love and the best of intentions, you’ll make it through.

Is My Teen Troubled?

Although there are many books that offer tips, there isn’t a universal reference guide that can prepare a parent for what will happen during their child’s teenage years.  There are so many changes that your teen is facing that could influence them in a positive or negative way.

As your teenager begins to assert their independence, some behavioral changes may become bizarre and unpredictable. Your once sweet, obedient child, who always wanted to be with you, now wants to have as little association with you as possible.  The child that hung on to your every word now rolls their eyes when you give your opinion or advice.  These are the actions of a normal teenager, but how can you know if their behavior is a sign of greater issues?

Some teenagers exhibit a break in communication, fighting, defiance, violent mood swings and explosive anger. These teens face behavioral, emotional, and learning problems that are beyond the normal teenage issues and pose a greater challenge for their parents.

Some warning signs that your teen may be troubled are:

  • Changes in appearance, if it is accompanied by problems at school other negative changes in behavior, such as self-harm or extreme weight loss or weight gain.
  • Repeated escalation of arguments, violence at home, skipping school, getting into fights, and run-ins with the law.
  • Rapid changes in personality, falling grades, persistent sadness, anxiety or sleep problems, depression, bullying or talk of suicide.
  • Alcohol consumption or drug use becomes habitual.
  • A sudden change in peer group, especially if the new friends encourage negative behavior.

The challenge for parents is to help their teen cope with emotions and deal with anger in a more constructive way.  First, parents need to establish clear rules and consequences; teens need rules now more than ever.  Secondly, suggest exercise and team sports to your teen, they have proven effective in the relief of tension and anger, give your teen and yourself, space to cool off.  Lastly, you can’t help your teen if you lose your temper as well.

Parenting a troubled teen can seem like an impossible task, but identifying red flag behaviors in your teen, seeking help from a doctor, counselor, therapist or other mental health professional is a step in the right direction.

A Spring Green Salad Citronette

The weather is starting to get nice, winter is slowly becoming a distant memory. What better way to enjoy a meal than with a  light, tasty, and colorful salad.
Ingredients:
¼ cup fresh orange juice
¼ cup lemon juice
¼ cup extra virgin olive oil
1 small finely chopped challot
2 teaspoons Dijon mustard
½ teaspoon salt
¼ teaspoon of freshly ground pepper
4 cups torn peppery and / or bitter greens such as frisee, watercress, radicchio or arugula
8 cups mild greens such as Boston lettuce, mesculin, baby spinach or baby romaine
1/3 cup thinly sliced red onion

Combine orange juice, lemon juice, oil, shallot, mustard, salt and pepper in a jar with a tight fitting lid
Close the jar and shake well
Place greens and onion in a large salad bowl, toss with 1/3 cup dressing.
Serves 6

Quieting That Cough, Naturally

Coughing is a common health problem.  When there is a blockage or irritant in your throat, your brain thinks a foreign element is present and tells your body to cough to remove that element.

Some reasons you may cough are itchy throat and congestion.  Instead of using over-the-counter cough suppressants, you may want to try a natural cough treatment using readily available ingredients in your kitchen.

Ginger tea is one of the most popular cures for a cough and is a proven home remedy.

Follow the recipe below for a simple and effective way to quiet a cough.

GINGER TEA

· Cut fresh ginger into small slices and crush them slightly.  Place them in a cup of water and bring to a boil.  You can also use some lemon juice and honey to taste.

It is suggested to drink this herbal solution three to four times a day for relief from a sore throat, coughing and even chest congestion.

Peripheral Vascular Disease and Hypertension

 

Peripheral Vascular Disease or PVD as it’s more commonly known, is a condition that is often associated with Hypertension.

PVD is a slow and progressive circulation disorder involving diseases in any of the blood vessels outside of the heart, the lymph vessels – arteries, veins, and lymphatic vessels. Organs supplied by these vessels, such as the brain, heart and legs may not receive adequate blood flow for ordinary function.

However, the legs and feet are the most commonly affected.

Up to half of the people diagnosed with PVD are symptom free. For those experiencing symptoms, most common and first symptom is intermittent leg discomfort described as cramping that occurs with exercise and is relieved by rest. During rest, the muscles need less blood flow, so the pain disappears. It may occur in one or both legs depending on the location of the blocked or narrowed artery.

Other symptoms of PVD may include:

  • Decreased skin temperature
  • Diminished pulses in the legs and feet
  • Hair loss on the legs
  • Impotence
  • Numbness, weakness, or heaviness in muscles
  • Reddish coloring of the extremities

Some risk factors for peripheral vascular disease include factors that can be changed or treated with lifestyle changes, such as controlling your blood pressure or increasing physical activity. Unfortunately, risk factors like age and family history of heart disease and hypertension cannot be changed.

Palliative Care vs Hospice Care

When you are faced with the decision of choosing whether palliative care or hospice care better suites the needs of you, or your loved ones; it is best to know the definition and relationship between the two before deciding. 

Palliative care focuses on relieving symptoms that are related to a chronic illness, such as cancer, cardiac disease, respiratory disease, kidney failure, Alzheimer’s and other dementias, AIDS, Amyotrophic Lateral Sclerosis (ALS) and other neurological diseases. Palliative care can be used at any stage of illness –not just advanced stages.

 Hospice care is palliative by nature, but is only offered when the patient has progress to a point where curative treatment is no longer desired. Hospice care supports the patient, and their families, on the journey to end of life focusing on relieving symptoms and offering comfort from pain, shortness of breath, fatigue, nausea, anxiety and insomnia.

 Although there are differences between palliative care and hospice care, there is a relationship between the two. Knowing the treatment differences and similarities may be helpful when making your decision, including: 

  • Treatments are not limited with palliative care and can range from conservative to aggressive or curative.
  • Hospice care treatments are limited and focus on the palliation of symptoms. The goal is no longer to cure, but to promote comfort.
  • Palliative care can be considered at any time during the course of a chronic illness.
  • With hospice care, Medicare requires that a physician certify that a patient’s condition is terminal. The physician must certify that a patient’s life expectancy is six months or less.
  • Both palliative and hospice care can be delivered at any location.
  • Palliative care services are typically provided through regular physician and nursing visits.
  • Hospice care services are more inclusive than palliative care services. Hospice care includes physician services, nursing services, social worker, spiritual care, bereavement care and volunteers. In some cases physical, occupational, speech and dietary therapy services, as well as other counseling services are deemed necessary as part of the hospice holistic care plan to manage terminal symptoms and provide support for the individual and their family.
