They are  a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.\u00a0Beetroot\u00a0and\u00a0beetroot\u00a0juice have been associated with numerous\u00a0health benefits, including improved blood flow, lower blood pressure, and increased exercise performance. <\/p>\n\n\n\n<p> If you are in the mood for a beet based citrus salad delight, try this recipe for a quick, nourishing and delicious salad. INGREDIENTS:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 bunch kale<\/li><li>1 bunch lettuce<\/li><li>1 kohlrabi<\/li><li>1 beet<\/li><li>2 carrots<\/li><li>1 grapefruit<\/li><li>4 tablespoons olive oil<\/li><li>1 tablespoon honey<\/li><li>1 teaspoon Dijon mustard<\/li><li>\u00bd teaspoon kosher salt<\/li><li>\u00bc teaspoon freshly ground pepper<\/li><li>\u00bc cup sunflower seeds or pepitas<\/li><\/ul>\n\n\n\n<p>DIRECTIONS:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Remove the stems from the kale and chop it into bite-sized pieces. Chop the lettuce into bite-sized pieces. Peel the kohlrabi, beet, and 2 carrots and chop them into matchsticks (julienne) with a knife or using a food processor. Remove the sections from half of the grapefruit and peel them.<\/li><li>In a small canning jar, combine juice from the remaining half grapefruit (around \u00bc cup), 4 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon Dijon mustard, \u00bd teaspoon kosher salt, and \u00bc teaspoon freshly ground pepper. Cover the jar and shake vigorously to combine (or whisk all ingredients together in a bowl).<\/li><li>To serve, place vegetables on serving plates or in bowls.
