Olive oil<\/p>\n\n\n\n<p>2 Garlic cloves minced<\/p>\n\n\n\n<p>1 Onion diced<\/p>\n\n\n\n<p>1 Butternut Squash peeled and diced into cubes\n(can use frozen pre-cut as well)<\/p>\n\n\n\n<p>4 cups (32 ounces) Vegetable Broth<\/p>\n\n\n\n<p>1-2 tsp. salt (optional)<\/p>\n\n\n\n<p>1 tsp freshly grated Ginger (optional)<\/p>\n\n\n\n<p>Instructions<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Heat olive oil in a\npot over medium heat. Add onion and garlic. Cook until softened, about 5\nminutes.<ol><li>Add cut up butternut\nsquash and vegetable broth. Bring to a boil then cover and simmer for 15-20\nminutes until squash is softened.<\/li><\/ol><ol><li>Carefully pour entire\ncontents of pot into blender or use an immersion blender. Add salt and ginger.<\/li><\/ol><ol><li>Carefully blend until\nsmooth.
