{"id":6340,"date":"2019-03-20T18:19:04","date_gmt":"2019-03-20T18:19:04","guid":{"rendered":"http:\/\/jamaicahospital.org\/newsletter\/?p=6340"},"modified":"2024-05-09T03:33:59","modified_gmt":"2024-05-09T03:33:59","slug":"citrus-marinated-salmon-with-couscous-and-sauteed-haricot-verts","status":"publish","type":"post","link":"https:\/\/jamaicahospital.org\/newsletter\/citrus-marinated-salmon-with-couscous-and-sauteed-haricot-verts\/","title":{"rendered":"Citrus Marinated Salmon with Couscous and Sauteed Haricot Verts"},"content":{"rendered":"<p>March is National Nutrition Month.\u00a0 Jamaica Hospital Medical Center&#8217;s Department of Nutrition is marking the occasion with a healthy and tasty receipe for Citrus Marinated Salmon with Couscous and Sauteed Haricot Verts.<\/p>\n<p>This receipe serves four (4)<\/p>\n<p>We would like to thank our<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p>Fish<\/p>\n<p><em><strong>Marinade:<\/strong><\/em><\/p>\n<p>3 Tablespoon Orange Juice<\/p>\n<p>1 Tablespoon lemon juice<\/p>\n<p>1.5 Tablespoon minced garlic<\/p>\n<p>1 Teaspoon canola oil<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>4- 4 oz Salmon filets<\/p>\n<p>Haricot Verts- French Green beans<\/p>\n<p>1 lb green beans, French, fresh<\/p>\n<p>1 Tablespoon canola oil<\/p>\n<p>3 cloves garlic, peeled, minced<\/p>\n<p>Kosher salt to taste<\/p>\n<p><em><strong>Couscous:<\/strong><\/em><\/p>\n<p>Prepare according to package<\/p>\n<p><strong>PREPARATION:<\/strong><\/p>\n<p>To prepare fish:<\/p>\n<ol>\n<li>Combine marinade ingredients bowl, place salmon in marinade<\/li>\n<li>Heat canola oil in sautee pan over high heat<\/li>\n<li>Remove fish from marinade and discard excess marinade<\/li>\n<li>Place fish in hot pan, Flesh side down, cook for 4-5 minutes, flip fish to skin side, cover pan and cook 4 additional minutes or until cooked through and fish is flakey<\/li>\n<\/ol>\n<p>To prepare green beans<\/p>\n<p>If using fresh green beans \u2013 follow steps below. If using frozen \u2013 skip to step 5<\/p>\n<ol>\n<li>Trim ends of green beans<\/li>\n<li>Bring pot of water to boil, blanch green beans for 1-2 minutes in boiling water<\/li>\n<li>Shock green beans in ice bath<\/li>\n<li>Drain green beans<\/li>\n<li>Heat oil in saut\u00e9 pan over medium high heat<\/li>\n<li>Add minced garlic, saut\u00e9 30 seconds until fragrant<\/li>\n<li>Add green beans and saut\u00e9 for 1 minute or until evenly coated and heated through. (if using frozen green beans, will need more time to cook through)<\/li>\n<li>Season with kosher salt to taste<\/li>\n<\/ol>\n<p>To prepare the couscous<\/p>\n<ol>\n<li>Cook couscous according to the package directions<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p class=\"disclaimer\">All content of this newsletter is intended for general information purposes only and is not intended or implied to be a substitute for professional medical advice, diagnosis or treatment.
