{"id":5471,"date":"2018-06-20T17:15:13","date_gmt":"2018-06-20T17:15:13","guid":{"rendered":"http:\/\/jamaicahospital.org\/newsletter\/?p=5471"},"modified":"2024-05-09T03:34:01","modified_gmt":"2024-05-09T03:34:01","slug":"eggplant-tomato-salad","status":"publish","type":"post","link":"https:\/\/jamaicahospital.org\/newsletter\/eggplant-tomato-salad\/","title":{"rendered":"EGGPLANT TOMATO SALAD"},"content":{"rendered":"<p>Served as the main dish or a tasty side, this nutritious and delicious Eggplant Tomato Salad will astonish the most finicky palate.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Here\u2019s all you need to get started!<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 green bell pepper<\/li>\n<li>1 large red bell pepper<\/li>\n<li>7 tomatoes<\/li>\n<li>1 eggplant<\/li>\n<li>4 cloves crushed garlic<\/li>\n<li>\u00bc cup extra virgin olive oil<\/li>\n<li>2 tablespoons tomato paste<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>\u00bd teaspoon ground black pepper<\/li>\n<li>\u00bd teaspoon cayenne pepper<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Roast peppers on stove burners or under oven broiler until skin turns evenly black. Immediately place in a plastic bag and let cool.<\/li>\n<li>Prepare the tomatoes by cutting an X on the bottom of each and boil in water for 1 minute, plunge into a cold water bath and let cool.<\/li>\n<li>Cut the eggplant into small strips and saut\u00e9 in oil until eggplant begins to brown. About 6 to 8 minutes.\u00a0 Once the eggplant is soft, add garlic.<\/li>\n<li>Rinse the peppers under cold water and remove the burnt skin (just the ash).
