Bring to a boil; reduce heat. Cover; simmer for 12 &#8211; 15 minutes or until water is absorbed. Remove from heat; set aside.<\/p>\n<p>In a large bowl combine the quinoa, edamame, corn, red pepper, scallions, and avocado; toss to combine.
