{"id":3939,"date":"2017-01-23T15:19:06","date_gmt":"2017-01-23T15:19:06","guid":{"rendered":"http:\/\/jamaicahospital.org\/newsletter\/?p=3939"},"modified":"2024-05-09T03:34:04","modified_gmt":"2024-05-09T03:34:04","slug":"beet-kale-and-kohlrabi-salad-with-grapefruit-vinaigrette","status":"publish","type":"post","link":"https:\/\/jamaicahospital.org\/newsletter\/beet-kale-and-kohlrabi-salad-with-grapefruit-vinaigrette\/","title":{"rendered":"Beet, Kale, and Kohlrabi Salad with Grapefruit Vinaigrette"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>There are special fruits and veggie&#8217;s that are specific to a season. \u00a0For the winter season, you should be able to find some wonderful grapefruits, lemons, oranges, clementines and tangerines, as well as beets at your grocery store\u00a0right now.<\/p>\n<p>If you are in the mood for a Citris delight, try this receipe for a quick, nourishing and delicious salad.<\/p>\n<div class=\"ERSIngredients\">\n<div class=\"ERSIngredientsHeader ERSHeading\">WHAT YOU NEED<\/div>\n<ul>\n<li class=\"ingredient\">1 bunch kale<\/li>\n<li class=\"ingredient\">1 bunch lettuce<\/li>\n<li class=\"ingredient\">1 kohlrabi<\/li>\n<li class=\"ingredient\">1 beet<\/li>\n<li class=\"ingredient\">2 carrots<\/li>\n<li class=\"ingredient\">1 grapefruit<\/li>\n<li class=\"ingredient\">4 tablespoons olive oil<\/li>\n<li class=\"ingredient\">1 tablespoon honey<\/li>\n<li class=\"ingredient\">1 teaspoon Dijon mustard<\/li>\n<li class=\"ingredient\">\u00bd teaspoon kosher salt<\/li>\n<li class=\"ingredient\">\u00bc teaspoon freshly ground pepper<\/li>\n<li class=\"ingredient\">\u00bc cup sunflower seeds or pepitas<\/li>\n<\/ul>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<div class=\"ERSInstructions\">\n<div class=\"ERSInstructionsHeader ERSHeading\">WHAT TO DO<\/div>\n<ol>\n<li class=\"instruction\">Remove the stems from the kale and chop it into bite-sized pieces. Chop the lettuce into bite-sized pieces. Peel the kohlrabi, beet, and 2 carrots and chop them into matchsticks (julienne) with a knife or using a food processor. Remove the sections from half of the grapefruit and peel them.<\/li>\n<li class=\"instruction\">In a small canning jar, combine juice from the remaining half grapefruit (around \u00bc cup), 4 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon Dijon mustard, \u00bd teaspoon kosher salt, and \u00bc teaspoon freshly ground pepper. Cover the jar and shake vigorously to combine (or whisk all ingredients together in a bowl).<\/li>\n<li class=\"instruction\">To serve, place vegetables on serving plates or in bowls.
