{"id":2835,"date":"2015-12-01T17:33:10","date_gmt":"2015-12-01T17:33:10","guid":{"rendered":"http:\/\/jamaicahospital.org\/newsletter\/?p=2835"},"modified":"2024-05-09T03:34:07","modified_gmt":"2024-05-09T03:34:07","slug":"snack-chips-that-wont-go-straight-to-your-hips","status":"publish","type":"post","link":"https:\/\/jamaicahospital.org\/newsletter\/snack-chips-that-wont-go-straight-to-your-hips\/","title":{"rendered":"SNACK CHIPS THAT WON\u2019T GO STRAIGHT TO YOUR HIPS!"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>With the holiday season in full swing and snacking at an all-time high, you may be interested in this delicious and healthy alternative potato chips for your party table\u2026<\/p>\n<p><strong><span style=\"text-decoration: underline\">Cracked Pepper Potato Chips with Onion Dip<\/span><\/strong><\/p>\n<p><strong><em>Ingredient\u2019s for the chips:<\/em><\/strong><\/p>\n<ul>\n<li>3 Large russet potatoes (2 \u00bc\u00a0 pounds total), sliced into 1\/8-inch thick rounds<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>2 teaspoons coarsely ground black pepper<\/li>\n<li>Salt<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><em>Ingredient\u2019s for the dip:<\/em><\/strong><\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>1 small onion, minced<\/li>\n<li>2 scallions, thinly slices, greens and whites separated<\/li>\n<li>1 \u00bc cups nonfat Greek style yogurt or 1 2\/3 cups regular nonfat plain yogurt<\/li>\n<li>\u00bc cup of mayonnaise<\/li>\n<li>\u00be teaspoon garlic powder<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>\u00bc teaspoon pepper<\/li>\n<\/ul>\n<p><strong><em>How to make this recipe:<\/em><\/strong><\/p>\n<p>Chips &#8211; Toss potatoes in a large bowl with 2 tablespoons of oil, and pepper until well coated.\u00a0\u00a0 Preheat oven to 450 degrees F.\u00a0 Arrange potato slices in 1 layer on 2 cookie sheets.\u00a0 Bake for 20 to 25 minutes until chips are crisped and lightly browned.\u00a0 Remove from oven, season with salt and cool.<\/p>\n<p>Dip \u2013 Heat oil over a medium heat and add onions and scallion whites.\u00a0 Cook, stirring often, until golden brown and soft, about 10 minutes.\u00a0 Remove from heat and allow to cool.\u00a0 If using\u00a0 regular yogurt, place it in a strainer lined with a paper towel and set the strainer over a bowl.\u00a0 Let the yogurt drain and thicken for 20 minutes.<\/p>\n<p>Combine onions with thickened or Greek style yogurt, mayonnaise, onion powder, garlic powder, salt pepper and scallion greens and stir well to incorporate.\u00a0 Chill for 1 hour to let flavors meld.<\/p>\n<p>Serve with chips<\/p>\n<p>Excellent source of Vitamin C<\/p>\n<p>Good source of Potassium<\/p>\n<p>For more healthy snack recipes visit http:\/\/www.foodnetwork.com\/healthy\/packages\/healthy-every-week\/healthy-appetizer-recipes\/healthy-appetizer-recipes.html<\/p>\n<p>&nbsp;<\/p>\n<p class=\"disclaimer\">All content of this newsletter is intended for general information purposes only and is not intended or implied to be a substitute for professional medical advice, diagnosis or treatment.
